Organic Chocolate
It's not secret that we like our chocolate here at
nouvelle mama.
Rubens Chocolate is a
new organic chocolate bar available at
LifeStyle Markets. The
folks at
Rubens sent us over some of their three available types of
chocolate, milk, 55% cocoa and 75% cocoa butter bars, to try
out.
I was given instructions on how to properly eat chocolate. Take
one or two bites then let the chocolate melt. Chocolate has over
500 profiles, more than almost any other food, so your taste
receptors need time to savour and appreciate all the profiles.
Chocolate melts at body temperature, so taking your time makes
the experience of each bite last.
Our panel of fellow mamas helped out with the difficult task of
tasting and comparing the three bars to our regular chocolate
choices. Here's what we had to say:

The
milk chocolate seemed to
be the least favourite. Tasters said that they found it a bit
too sweet and not as well done, in terms of flavour, as the dark
chocolate. The texture was described as everything from "a
little fatty, greasy" to crumbly and not as smooth as expected,
with one taster adding that the first bite seemed chalky, but as
the chocolate melted on the tongue, the smoothness came through.
The 55% cocoa dark
bar was described again in a range of textures, from creamy
to chalky. One person described this bar as having an herby
flavour, while others said that it had a nice, clean
chocolate taste.
The 74% cocoa dark
bar was the hands-down
favourite. The texture was unanimously smooth and
much less chalky than the other two bars, and the taste was
"a nice bitterness," "richer flavour" than the others, and
from one non-chocolate eater it was described as "not too
sweet; more chocolate than sugar. What it needs is some
chilli pepper in it!" (I'll always agree with that statement
about chocolate!)
Rubens does make and sell different truffles, hot chocolates
and specialty desserts in their retail store in Port Moody,
but for now we will have to be content with their tasty dark
chocolate.
